The India Pale Ale brewed by Southern Tier Brewing Company is their version of a brewing legacy. IPA's name hails from its colonial roots. British soldiers in India didn't have access to good beer, and all the malty ales they attempted to ship would go stale. The addition of a generous amount of hops to the brew created a drinkable beer that could survive the heat and motion of the sailing ships, and a new style was born: ale with a vigorous hop profile, well-balanced malt background and medium body.
